Hearty Keto Beef Stew

Slow simmered stew, no potatoes
The thing that usually knocks beef stew off a keto plate is the potatoes and the flour used to thicken the gravy. Both are easy to work around. Radishes soften into something close to a waxy potato once they simmer, and reducing the braising liquid gives you a glossy gravy without any starch.
Give the beef a proper sear before it goes into the pot, since that browning is where most of the deep flavor comes from. From there it is mostly hands off. Let it simmer low and slow until the meat pulls apart with a fork.

Ingredients
- 2 pounds beef chuck, cut into 1 1/2 inch cubes (net carbs โ)
- 2 tablespoons olive oil (net carbs โ)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 small onion, diced (net carbs โ)
- 4 cloves garlic, minced (net carbs โ)
- 2 tablespoons tomato paste (net carbs โ)
- 4 cups beef broth (net carbs โ)
- 1 pound radishes, halved
- 2 stalks celery, chopped (net carbs โ)
- 1 teaspoon dried thyme
- 2 bay leaves
- 1/4 teaspoon xanthan gum (optional) (net carbs โ)
Instructions
- 1Pat the beef dry and season with salt and pepper. Heat the olive oil in a heavy pot over medium-high heat and sear the beef in batches until browned on all sides. Set aside.
- 2Lower the heat, add the onion, and cook until soft. Stir in the garlic and tomato paste for 1 minute.
- 3Pour in the broth, scraping up the browned bits, then return the beef with the thyme and bay leaves. Cover and simmer for 1 1/2 hours.
- 4Add the radishes and celery and simmer uncovered for another 30 minutes, until the beef is tender.
- 5For a thicker gravy, whisk in the xanthan gum and simmer for 2 minutes. Remove the bay leaves before serving.

Once simmered, radishes lose their peppery bite and soften into something close to a waxy potato. They will not fool everyone, but they hold up well in the gravy and add very few carbs.
How do I thicken the gravy without flour?
A quarter teaspoon of xanthan gum whisked in at the end thickens the liquid nicely. Simmering uncovered to reduce the broth also concentrates it.
