Keto Chicken Zoodle Soup

Classic chicken noodle soup gets its comfort from the broth, the shredded chicken, and the aromatics, not the pasta. Swap the noodles for spiralized zucchini and you keep everything that matters while dropping the carbs to a few grams a bowl.
The zoodles go in at the very end so they stay tender instead of turning to mush. Everything else comes together in one pot in about half an hour, which makes this a good option when someone in the house is fighting a cold. Leftovers keep for three days, though it helps to store the zoodles separately if you can.

Ingredients
- 2 tablespoons butter (net carbs โ)
- 1 small onion, diced (net carbs โ)
- 2 stalks celery, sliced (net carbs โ)
- 3 cloves garlic, minced (net carbs โ)
- 8 cups chicken broth (net carbs โ)
- 1 1/2 pounds cooked shredded chicken (net carbs โ)
- 1 teaspoon dried thyme
- 2 bay leaves
- 3 medium zucchini, spiralized (net carbs โ)
- 2 tablespoons chopped fresh parsley (net carbs โ)
- Salt and black pepper to taste
Instructions
- 1Melt the butter in a large pot over medium heat. Add the onion and celery and cook until softened, about 5 minutes.
- 2Stir in the garlic and cook for 1 minute, then pour in the broth and add the thyme and bay leaves. Bring to a simmer.
- 3Add the shredded chicken and simmer for 10 minutes so the flavors come together.
- 4Remove the bay leaves. Stir in the spiralized zucchini and cook for 2 to 3 minutes, just until tender.
- 5Season with salt and pepper, top with parsley, and serve.

Add them at the very end and cook for only 2 to 3 minutes. If you plan to store leftovers, keep the zoodles separate and add them fresh when you reheat, since they soften more in the warm broth over time.

Yes. Rotisserie chicken is a good shortcut here. Shred about three cups and add it with the broth, just long enough to heat through.
