The famous restaurant biscuit leans on white flour and sugar, so a straight swap will not work. Almond flour handles the body here, a little coconut flour tightens the crumb, and baking powder plus eggs give the lift. Sharp cheddar and garlic butter carry the flavor that people actually remember.

These are drop biscuits, so there is no rolling or cutting. Scoop the dough into rough mounds and they spread into craggy, golden tops. Brush the hot garlic butter on the second they leave the oven so it soaks in rather than sitting on the surface.

Can I skip the coconut flour?

You can, but the biscuits hold together better with it. Coconut flour absorbs extra moisture from the eggs and cheese so the dough is not too wet. If you leave it out, add a few tablespoons more almond flour instead.

How do I store leftovers?

Keep them in a sealed container in the fridge for up to four days. Reheat in a low oven or toaster oven for a few minutes to bring back the crisp edge, since the microwave leaves them soft.
