Chia Seed Pudding (Vanilla)
Creamy overnight chia pudding sweetened with vanilla and a keto sweetener. Just stir, chill, and wake up to a fiber-rich, no-cook keto breakfast.
Breakfast that makes itself overnight
Chia pudding is the ultimate set-it-and-forget-it keto breakfast. You stir a few ingredients together at night, and by morning the seeds have swelled into a thick, spoonable pudding with the texture of tapioca.
Because chia seeds are almost entirely fiber and fat, the net carbs stay low even though the total carbs look higher. That fiber also keeps you full for hours, which makes this a smart choice on busy mornings.
- Whisk twice in the first half hour to prevent clumping
- Use full-fat coconut or almond milk for the creamiest result
- Keeps in the fridge for up to four days

Recipe FAQ
Why is the total carb count so much higher than net carbs?
Chia seeds are extremely high in fiber, which your body does not absorb as digestible carbohydrate. Subtracting the fiber leaves only about four net carbs per serving.
My pudding turned out watery. What went wrong?
The seeds probably clumped instead of dispersing. Whisk a second time about five minutes after mixing, and give it a full four hours to set. Add another tablespoon of chia if it still runs thin.
