Low and slow beats high and fast

Most scrambled eggs go wrong the moment the heat gets too high. The curds seize, weep water, and turn rubbery before you can plate them. On keto, where eggs do so much of the heavy lifting, that is a daily tragedy worth fixing.

The fix is embarrassingly simple: keep the pan at medium-low, stir almost constantly, and pull the eggs off the heat while they still look slightly underdone. Carryover cooking finishes the job.

  1. 1Crack the eggs into a bowl, add the heavy cream and cream cheese, and whisk until the yolks and whites are fully blended with no streaks.
  2. 2Melt the butter in a nonstick skillet over medium-low heat, swirling to coat the pan.
  3. 3Pour in the eggs and let them sit undisturbed for about 20 seconds, then begin stirring slowly with a spatula.
  4. 4Keep stirring and folding the eggs, scraping the bottom, so they form small, soft curds. Lower the heat if they set too quickly.
  5. 5When the eggs still look slightly wet and glossy, remove the pan from the heat and fold in the shredded cheese. They will finish cooking from residual warmth.
  6. 6Season with salt, pepper, and a pinch of garlic powder, fold in the chives, and serve immediately.

Recipe FAQ

Why do you add salt at the end instead of the beginning?

Salting raw eggs and letting them sit can break down the proteins and make the finished curds watery. Seasoning right before serving keeps the texture soft and creamy.

Can I make these without cream?

Yes. The cream adds richness, but you can leave it out or swap in a tablespoon of full-fat sour cream or a splash of unsweetened almond milk. The eggs will be a touch less custardy.
