- 8 bone-in, skin-on chicken thighs (net carbs โ)
- 1/4 cup olive oil (net carbs โ)
- 3 tablespoons fresh lemon juice (net carbs โ)
- 1 tablespoon lemon zest (net carbs โ)
- 5 cloves garlic, minced (net carbs โ)
- 2 tablespoons chopped fresh parsley (net carbs โ)
- 1 tablespoon chopped fresh oregano
- 1 teaspoon chopped fresh thyme
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
Instructions
- 1In a large bowl, whisk together the olive oil, lemon juice, zest, garlic, parsley, oregano, thyme, salt, pepper, and red pepper flakes.
- 2Add the chicken thighs and turn to coat. Marinate for at least 30 minutes or up to 6 hours in the refrigerator.
- 3Heat a grill or grill pan to medium-high and oil the grates.
- 4Place the thighs skin-side down and grill for 6 to 7 minutes until the skin is crisp and releases easily.
- 5Flip and grill for another 6 to 8 minutes, until the internal temperature reaches 175 degrees Fahrenheit.
- 6Transfer to a plate, tent loosely with foil, and rest for 5 minutes.
- 7Serve with extra lemon wedges and a green salad.
