Soft rolls without a proofing bowl

There is no yeast to wait on here. These rolls rise from whipped eggs and baking powder, so they come together in one bowl and go straight into the oven. Almond flour keeps them tender, and a spoonful of psyllium gives just enough structure so they do not collapse as they cool.

Beating the eggs until they are pale and frothy is what makes these light rather than dense. Fold the dry ingredients in gently to keep that air in the batter. Baked close together in a dish, the rolls touch and puff into soft sides you can pull apart at the table.

Brush the tops with melted butter as they come out and serve them warm alongside dinner.

  2. 2Whisk the almond flour, psyllium husk powder, baking powder, and salt in a large bowl.
  3. 3In a separate bowl, beat the egg whites until soft peaks form.
  4. 4Whisk the egg yolks, sour cream, melted butter, and warm water into the dry ingredients until a thick batter forms, then gently fold in the whipped whites.
  5. 5Scoop 8 mounds into the dish, setting them close so they will bake together, and smooth the tops.
  6. 6Bake for 22 to 26 minutes until risen and golden, brush with melted butter, and cool for 10 minutes before pulling apart.

Recipe FAQ

Do I really need to separate the eggs?

It is worth it. Whipping the whites separately and folding them in traps air that lifts the rolls, so they bake up light instead of heavy. If you are short on time you can beat whole eggs, but expect a denser roll.

Can I freeze the rolls?

Yes. Cool them completely, then freeze in a sealed bag for up to two months. Reheat from frozen in a 300F oven for about 10 minutes so they warm through and the crust firms back up.
