Salami, fresh mozzarella, olives, and cherry tomatoes threaded onto skewers with basil. A no-cook Italian lunch or party plate at 4 grams of net carbs per serving.
An Italian deli board on a stick
These skewers turn an antipasto platter into something you can pack and carry. Fresh mozzarella balls, folded salami, briny olives, and cherry tomatoes go on a skewer with a basil leaf, then get a drizzle of olive oil and vinegar. It is a no-cook lunch that feels like a treat.
They are also a smart move for gatherings, since each skewer is a self-contained portion. Assemble them ahead and keep them cold until you serve.
- Pat the mozzarella dry so the skewers do not get watery
- Fold the salami into quarters so it threads easily
- Add the basil last so it stays green and fresh

Recipe FAQ
Can I assemble antipasto skewers ahead of time?
Yes, they are ideal for making ahead. Build the skewers up to a day early and keep them covered in the fridge. Hold off on the olive oil dressing and basil until serving time so the herbs stay fresh and the skewers do not sit in liquid.
What meats and cheeses work besides salami and mozzarella?
Prosciutto, capicola, and pepperoni all fit, as do provolone cubes and small chunks of aged parmesan. Keep to cured meats and firm cheeses that hold their shape on a skewer, and check that any cured meat has no added sugar in the ingredients.
Are olives and artichokes keto-friendly?
Both are keto staples in normal portions. Olives are mostly fat with very few carbs, and marinated artichoke hearts add just a gram or two per serving. Drain them well and avoid any packed in sweetened marinades to keep the count low.
