Coconut Flour Waffles
Crisp-edged, tender coconut flour waffles that hold up to butter and sugar-free syrup. A nut-free keto breakfast for lazy weekend mornings.
Crisp waffles without the wheat, or the nuts
Coconut flour is a keto baker's best friend and worst enemy at once. It is nut-free and very low in net carbs, but it drinks up liquid like a sponge, so recipes need more eggs and fat than you would expect.
Get the ratio right, though, and coconut flour produces a waffle with genuinely crisp edges and a tender, cake-like inside. These come off the iron golden and sturdy enough to hold a pat of melting butter.
- Let the batter rest so the coconut flour hydrates
- Do not open the iron too early or the waffle will tear
- Cook until deeply golden for maximum crispness

Recipe FAQ
Why does coconut flour need so many eggs?
Coconut flour is extremely absorbent and has no gluten to provide structure. The eggs supply both moisture and the binding that holds the waffle together, so do not cut back on them.
Can I freeze these waffles?
Yes. Cool them completely, then freeze in a single layer before transferring to a bag. Reheat straight from frozen in a toaster to bring back the crisp edges.
