Takeout fried rice, minus the rice

Riced cauliflower stands in for white rice here and soaks up all the same savory flavor. Cooked hot and fast with egg, sesame oil, and coconut aminos, it hits the same salty, toasty notes as the version from the takeout box.

Keep the heat high and the pan moving. Cauliflower releases water as it cooks, and a hot pan drives that moisture off so the rice fries instead of steaming into mush. Frozen riced cauliflower works well; just thaw and squeeze it dry first.

Leave out the peas and carrots that spike the carbs, and lean on green onion, garlic, and ginger for flavor instead.

How do I keep cauliflower rice from getting mushy?

Cook it hot and fast in a wide skillet so the water evaporates instead of pooling. Do not crowd the pan, stir often, and if you use frozen riced cauliflower, thaw it and squeeze out the excess water in a towel before it goes into the skillet.

Is coconut aminos better than soy sauce on keto?

Both work. Coconut aminos is slightly sweeter and lower in sodium, with only about 1 gram of carbs per teaspoon, and it is soy-free and gluten-free. Regular soy sauce or tamari has almost no carbs either, so use whichever you prefer for flavor.
