Coconut Macaroons
Golden, chewy coconut macaroons with crisp toasted edges and a soft center, sweetened without sugar. Naturally gluten-free and just two net carbs each.
Chewy, toasty, and gone in a day
Macaroons are one of the easiest keto desserts to get right because shredded coconut is already low in net carbs and full of fiber. Bind it with egg whites and a little sweetener, and you have a cookie that bakes up crisp outside and tender within.
Whipping the egg whites to soft peaks is what keeps these light rather than dense. Fold gently so you do not knock out the air, and watch them closely near the end because coconut goes from golden to burnt fast.
- Whip the whites to soft, glossy peaks
- Pack the mounds firmly so they hold shape
- Dip the bases in sugar-free chocolate for a classic finish

Recipe FAQ
Why did my macaroons fall apart?
They usually crumble when the mounds are not packed tightly enough or when there is not enough egg white to bind the coconut. Press each scoop firmly into shape and make sure the coconut is fully coated before baking.
Can I make these dairy free?
They are already dairy free as written. For the optional chocolate dip, just use a dairy-free sugar-free dark chocolate and they stay fully dairy free.
